Next time you cook, don't throw away the shallot skin because they are proved beneficial to human health. ''Litter of the shallot is a source of scientific natural content because they are rich in compounds that produce benefits for human health.'' said Vanesa Benitez, a researcher from The Chemistry of Agriculture Department in University of Madrid, Spain.
Benitez was working with a scientist from Cranfield University, UK. They investigated the possible use of every part of the shallot. Based on their research that dry shallot skins contain a high fiber diet. Shallot skins also contain phenolic content such as quercetin and flavonoids and other metabolic substances that have efficacy as a medicine. Two layers of shallot skin also contain fiber and flavonoids. ''Eating fiber reduces cardiovascular disease, complaints of stomach, colon cancer, type 2 diabetes and obesity.'' she said.
